Smoked Salmon Tartar
Serves 6 (or makes 25-30 canapes)
Ingredients:
-third of a side of smoked salmon chopped
-1 chopped shallot
-juice and zest of ½ a lemon
-third cucumber peeled and diced
-teaspoon chopped fresh dill
-2oz soft butter
-1oz crème fraîche or yoghurt
Method:
-Combine all the ingredients.
-Season with pepper.
-Garnish with cucmber slices, lemon wedges and caviar (optional)
mekins.
To Serve:
Place ramekin on a plate with ice cream in a small side dish
