Creative and sustainable dining

At Knockinaam Lodge, we are passionate about where our food comes from. Taking influences from classical French dishes, but adding a modern, Scottish twist, we focus on using sustainably sourced, local ingredients to provide our guests with a dining experience to remember.

Supporting local producers

Using locally produced ingredients is really important to our head chef Tony Pierce and the wider kitchen team. We grow 70% of the vegetables and herbs on the menu at the hotel in our own polytunnel, using seaweed from the cove as a natural fertiliser, and we hope to increase this in the near future.

We aim to source as many ingredients as possible from within 50 miles of the hotel; our meat comes from Griersons Butchers in Castle Douglas, whilst our seafood is sourced from Galloway Smokehouse, just 30 miles away.

It’s not just the edible ingredients either, the freshly cut flowers at the hotel are grown within the grounds in our own garden.

We offer a tasting menu that changes daily depending on what’s fresh, available and in season, revealing the best of local Scottish produce in carefully planned dishes that make the most of the best ingredients available that day. A fantastic way to experience what our region has to offer, as well as creating a unique and memorable dining experience.

Enjoy carefully curated wines with your meal

Knockinaam Lodge owner David Ibbotson has carefully built up a fantastic collection of over 400 wines from around the world. Many guests comment that a stay at the hotel is not complete unless you enjoy and savour the hotel’s magnificent wine cellar, and with so many to choose from it’s a good reason to return!

We offer two wine flights to match meals every night, as well as extensive cocktail menus and gin menus, featuring local distillers and names from further afield. Who knows, you might even find a new favourite tipple!
