Tony keeps it fresh with his own touches, including surprise courses

In 1995 the daily changing set menu was introduced by Tony to Knockinaam Lodge, as one of the first in Scotland to adopt the 5 course tasting menu concept. By the early noughties many more had taken up the trend.

Of course, when someone says “set menu” you may think this is a policy of the kitchen to manage cooking time efficiently or use up surplus ingredients and in either case, you may feel it’s the kitchen dictating to you what you must eat.

A Set Menu that isn’t set in stone…

This is not the intention of the tasting menu: the daily changing menu is a great showcase for the most stunning ingredients that are sourced locally and further afield. That said, at Knockinaam we want you to be looking forward to your dining experience so we are very keen to know your likes and dislikes. Your own meal can be adapted to ensure you don’t go missing out on a course just because your most feared ingredient is taking centre stage as the main course.
