Chef Tony Pearce and the kitchen team at Knockinaam Lodge have one objective in mind each day and that is to please the guest. Tony has been doing just that at Knockinaam Lodge for 25 years and during that time has trained many young chefs the traditional methods of great cooking. That starts with the choice of ingredients and at Knockinaam we are blessed with outstanding quality seafood and farm produce right on our doorstep, so the team have the pick of the crop and that includes fresh vegetables, fruits and herbs from our very own hotel garden

With 3 AA Rosettes comes an expectation of high standards and the team seek to live up to that every day. The menu is carefully designed by Tony and his chefs, who select the best raw ingredients that their trusted suppliers of quality produce provide for the restaurant. It is then about adding the imagination, to come up with a different menu each day that has guests waiting in anticipation

In 1995 the daily changing set menu was introduced by Tony to Knockinaam Lodge, as one of the first in Scotland to adopt the 5 course tasting menu concept. By the early noughties many more had taken up the trend and while it is now a concept available in many places, Tony keeps it fresh with his own touches, including surprise courses

A Set Menu that isn’t set in stone…

Of course, when someone says “set menu” you may think this is a policy of the kitchen to manage cooking time efficiently or use up surplus ingredients and in either case, you may feel it’s the kitchen dictating to you what you must eat

This is not the intention of the tasting menu: the daily changing menu is a great showcase for the most stunning ingredients that are sourced locally and further afield. That said, at Knockinaam we want you to be looking forward to your dining experience so we are very keen to know your likes and dislikes and you own meal can be adapted to ensure you don’t go missing out on a course just because your most feared ingredient is taking centre stage as the main course
